Bento & Co. with Chef Thai Dang

Our next Bento & Co. welcomes Chef Thai Dang, chef and co-owner of HaiSous—a MICHELIN Bib Gourmand restaurant since 2017 and one of Chicago’s most beloved destinations for modern Vietnamese cooking.

 

Chef Dang’s cuisine is deeply personal, shaped by his journey from Vietnam to Chicago, and rooted in tradition while thoughtfully reimagined. A James Beard–nominated chef and current Best Chef: Great Lakes semifinalist, his cooking honors memory, resilience, and home.

 

For this series, Chef Dang presents Thịt Heo Kho Bento—Vietnamese caramelized pork belly and hen eggs, slow-braised and comforting. Served with pickled cucumber, guava salad, futo spring roll, water spinach with garlic, rice, and miso soup.

 

Available February 17–27, lunch only, for dine-in and carryout.

A portion of proceeds will benefit the Greater Chicago Food Depository.
